Based in Lethbridge, Alberta, Rainbow House Cookies is a home-based business run by Kim Siever. I specialize in homemade cookies, but I have also baked all sorts of goodies for customers.

  • Multigrain bread

    This bread was made with oats, corn, rice, rye, and wheat. I forgot to add seeds though.

  • Lemon blueberry loaf

    A customer asked me to make a lemon blueberry loaf. This one is topped with coarse sugar crystals.

  • Sourdough

    Freshly baked loaf of sourdough bread. This one rose pretty high. Hopefully slices will fit in the toaster.

  • Cinnamon buns

    I received another order for a dozen cinnamon buns. These are getting a little popular. I let this ones rise a bit more than usual, baked them, then topped them with a cinnamon glaze.

  • Being a disabled baker

    Baking is not the best profession for someone who cannot stand for long periods.

    A few years ago, I was in two accidents that ended up seriously injuring my knees. Now, I cannot squat, kneel, or run. Even standing or walking for long periods, or walking up and down stairs too much is a challenge. The more I use my knees, the more inflamed they become.

    One thing that helps is this barstool. It allows me to sit down, taking weight off my knees, while also being able to work at the counter.

    It allows me to bake longer than standing alone.

    Accommodations make a huge difference for disabled people. Even bakers.

  • Cinnamon buns and cheese buns

    A customer here in Lethbridge ordered a dozen cinnamon buns and a dozen cheese pizza buns, so I happily obliged.

    I made these Rice Krispies squares last night. They are a combination of chewy and crunchy.

  • Two orders for next week

    I received two orders to make for customers next week.

    One customer wants a dozen pizza buns and a dozen cinnamon buns.

    The other customer also wants cinnamon buns, but just a half dozen.

  • My mixer

    A few years ago, my stand mixer broke after it fell off the counter while unattended.

    I complained about it on social media, and before I knew it, a friend gave me this old KitchenAid mixer for free.

    It has since that time mixed enough cookie dough for thousands of cookies and enough bread dough for dozens, if not hundreds, of loaves, cinnamon buns, pizza buns, and just regular buns.

    And it is still going strong.
